What we do, in the first place, is to analyze variables that deal with the quality of olive oil used, with the food to be fried and with the process of frying it, temperature, time and quantity of product in question”, says Antonio Jessús Rivera, one of the research group's leaders.
Second, the oil's life span depends on its conditions. Thus, although the investigation will continue until October 2024, Spanish researchers already have a standard number: the refined sunflower's “Vaji can withstand as much as 20 fry”.
An amount that, in the case of extra virgin olive oil, can “double”. Of course, according to Rivera, the life span of oil will depend on foods that will burn.
Similarly, olive oil is advised not to be mixed with other fats, as some tolerate high temperatures more severely and break down. You also need to avoid causing severe temperature changes, and you need to fry food gradually, especially if it is frozen. /a2cn/
