A study by Kyushu University in Japan has shown that when the protein of beans breaks down, it becomes despict of brain molecules and can thus affect memory.
In a study published in the scientific magazine “Science of Food”, a group of mice, was injected with molecules that stimulate Alzheimer's disease, while some were fed on beans.
As a result, mice who took the beans ' protein are not affected by Alzheimer's disease as were those who did not.
Toshiro Matsui, professor of agriculture faculty and author, said that such studies help develop functional foods that can help prevent many diseases, including those of the brain.
