Pascal Philo has been stabbed three times in the middle of the road by an individual known to the police.
French radio network France Info reported that the suspect's dog had left him a week ago.
This is then said to have influenced the suspect to threaten several city officials.
Philo has died of injuries sustained at the hospital shortly after the attack occurred.
The mayor, Rhodes, Christian Teysère, told the AFP news agency that Philo was the father of three children.
