The study, published in Nature Neuroscience magazine, revealed that rats who were fed on a diet rich in salts showed signs of a decline in mental and cognitive performance.
The reason was that their brains were not supplied enough blood. Salt also increases the coloring of intercococotine 17, an inflammatory substance that can change chemical signals to brain blood vessels.
Dr. Dr Costatino Iadecola, director of the Fair Family Brain and Mind Research Institute, told ABC Australia:
