Prizren's secular tradition

From about 50 ovens, as much as there is in this city, this is one of the few ovens that are traditionally prepared for the salmon. They ripen with wood, as has been done for centuries.
“Sommuns are made of flour, salt, breadtops, and water. The essence lies in that it must be softer than other flour”, says of Radio Free Europe, Hysen Qolaku, who continues this trade, which his family has tradition of nearly two centuries. This person, who's in his late 60s, has worked in the oven since childhood.
As he prepares the dough with his family, the furnace is found in another large room.
Hajdar Colak is a little younger. He makes his final preparations after 5: 00 a.m., when customers begin to buy sausages or bring extra eggs, crushed cheese, or meat, added to the product.
