Today Periscop has reported exclusively that the Food and Veterinary Agency, which is under the umbrella of the Ministry of Agriculture led by Faton Peci, has completely concealed a crime against citizens who have consumed fish with Anisakis worms. After this report, The AUV has come up with a recent response and clarification for citizens about how to kill parasites before consuming them.

“Merluc fish type, which is located on the Kosovo market, except it is frozen, belongs to the type which is dedicated to preparing with heat treatment (D.M. TH to cook, not as fresh or melted in specials as „crux1> or „sushi“with qras cannot be put before the consumer if it contains parasitic”, it is said among other things in AUV's announcement.

We stress that legally, any food product that results in contamination, harmful to public or uncertain health should be stopped immediately from circulation, destroyed and the consumer informed. In this case, not only have the other charges not been stopped, but the institution has kept silent, leaving no public notice, hiding tests and allowing operators to continue distribution.

According to the Food Law (No. 08/L-120), Food Agency is obliged to inform consumers immediately in case of danger. Article 6 of the law clearly stipulates that “in the case of danger from any food, the Agency is obliged to inform the public, state institutions and parties of interest”.

However, that did not happen. Rather, AUV has chosen to silence the danger by allowing a product with potential serious health consequences, such as serious allergies, gastrointrine infections, or even other complications, to be consumed freely in the market.

Chapter III point of Section V III of Appendix III of Adjust (KE) No. 853/2004 contains a request that certain fish products undergo sufficient treatment to kill potential parasites that may pose a threat to consumer health. It is applied to fish products designed to consume raw and non-inflicted fish products or are not targeted before consumption is subject to treatment that kills such parasites. Lavery stages of such parasites pose a threat to consumer health are (1) nematodas, primarily the larvae of species Anisakis and Periodoterranova decipiens, (2) the larvae (plerocercoide) of Diphylobothrium cestoids, and (3) the larvae (metaceriae) of the trimatodes.

Fish products are often marketed as fresh fishing products, which are treated with consumer heat before being eaten in a way that ensures the killing of potential parasites. This is a firm and accepted practice even though such fresh fish products can contain living parasites at the moment of the purchase.
The legislative text specifys temperature and time for treatment that will be applied to food business operators to kill potential parasites. For parasites different than trimatodes, freezing treatment should reduce temperature throughout the product or -20 °C or lower for no less than 24 hours, or -35 °C or lower for no less than 15 hours.
For parasites different than trimatodes, the legislation specifys a thermal treatment with a central temperature of 60 °C or more in one minute. Reaching such a basic temperature depends on the thickness and composition of the product. It has been estimated that a 3cm thick file should be heated in 10 minutes to ensure that larvae Anisakis spa. to be destroyed. However, the larvae's stages (metacertary) of trimatodes (including the species Opisthorchis and the species Clonorchis) in freshwater fish in certain geographic areas are more resistant to temperatures. Food business operators who market sweet waterfish should also consider the risk that such products may contain metaceracys that can pose health risks if intended to eat without a treatment that kills such parasites.
Various reports show different parameters for dealing with freezes that kill different trimatodes metacerias, which are again reflected in various legislative provisions worldwide. E The FSA refers in its opinion on Parasites in Fishing Products O statements BSH's that Opisthorchis spas. and Clonorchis spas. They get killed freezing at 10 °C in five days. Other temperature-time parameters for various metererias can be found among other things in the FAO 444 Technical Fishing Document.
These records include references showing that it takes 3-4 days to kill Cronorchis synensis larvae if they rise to -20 °C and 32 hours to kill Opisthorchis felinus larvae in -28 °C. Regarding the thermal treatment that will kill meterereriae EFSA refers to its opinion on Parasites in the fishing products at a 70 °C temperature for 30 minutes for the murder of Clonorchi and Opisthorchis metacriae. The legislation specifys that food business operators should not handle freezing for fish products that have been stored as frozen fishing products for a long time to kill potential parasites. According to legislation, frozen fish products should be kept at a temperature of no more than -18 ° C in all parts of the product. E The FSA recommends minimal preservation 96 hours to -18 °C to ensure the successful murder of Anisakis simplex. For cystold larvae, Diohylobothrium larvae are activated if the fish is held in -18oC for at least one day. Although the trimatodes larvae are somewhat more resistant, it can be estimated that during the period of frozen fishing products, they are normally kept at -18 °C during the cold conservation, transport, and distribution chain will kill all parasites that can represent a consumer health hazard. Other methods besides freezing or thermal treatment, such as dry cryptos for a certain period, can also kill parasites present in fishing products. If other such methods are used by food business operators to kill parasites that may pose a threat to consumer health, treatment should be conducted in line with a risk assessment documenting its efficiency.
