What's the difference?
The ingredient that separates coffee sugar from others is melassa. The darker the brown sugar, the more melasta contains. Light brown sugar contains 3.5% of the melassa. Dark brown sugar contains almost double 6.5 percent mela! This helps dark - brown sugar to have a deeper, complex flavor closer to the scent of candy.

What sugar should you use?
If your diet or regime does not specify “white” or “kaf”, you may be able to use the softest aphid sugar that is the most common. Exception is when you're making cake because in this case you have to use brown sugar to give your cake color.
