They have found that proteins present in the egg under the influence of digestive enzymes are converted into peptides that block the process of narrowing blood vessels.
The greater effect is on proteins from fried eggs, yet negative action of frying oil should also be taken into account.
However, doctors continue to recommend limited egg consumption because of the high amount of cholesterol in attendance.
